Just last weekend I hopped back on the workout wagon. I worked hard and heavy over the weekend, officially declared my June Mission - Focus on Fitness, and proceeded to pull (or strain, or possibly tear) something in my right arm during my workout the following day. There went my workout schedule for the week right down the drain - Come on, really?!
Second on the June agenda was getting back to decluttering, organizing, donating, and renovation work - ah, not likely when I can't even lift a bottle of water never mind any kind of strenuous work. Well I can do strenuous work, just not using my right arm. Great.
This week I move on to my dreaded 10 hour workday schedule. Yep, things just keep getting better by the moment, ugh! ::Insert variety of bad words here::
Let's get to the one thing I can control, this weeks menu plans...
Monday: Rotisserie Chicken with sides
(all straight from the deli, 2 chickens for lots of leftovers)
(using leftover rotisserie chicken)
Wednesday: Chicken Pesto Pizza
(using the last of the leftover chicken)
Thursday: Philly Cheese Steak Subs
Saturday: Jerk Roast Pork, Roasted Corn on the Cob, Fresh Fruit Kabobs
Sunday: Pressed Cuban Sandwiches (using leftover pork)
Black Beans and Rice

that is so true, Martha; we can control what we can eat! I am so sorry about your arm injury!! I'm sure that is the least thing you wanted to happen! I have to say, after telling you I would go out and exercise five days a week at the gym, the next day I got a whopper of a cold and missed three days last week, but getting back on schedule this week.
I am sooooo sorry! It has definitely not been a good season for you; you are in my prayers.
Loved the recipes this week; that chicken salad looks delicious! Might need to make that this week! I like that she had a lettuce tub to get her lettuce from; maybe I need to grow some myself!

Thanks so much Betty. As I was reading your comment and you said you went out and got a whopper... I thought it was going to say a whopper and fries, LOL!
I hope we can both get back to our workouts this week even with my 10 or like you said actually 12 hour days.
I hope you are feeling better too!
Especially with the 10 hour days I hope you get back to being able to work out - will make a huge difference on the stress level!
I have to check out that honey chicken salad - sounds fun. We're doing a ton of salads here for lunches.

Thanks Tamy. I made it through my first 10 hour day! Don't think I can work this arm quite yet but hope to be able to very soon. Still doing my interval walk/runs in the meantime :-)
Martha, I totally feel for you! I did the same thing - jumped back into exercising with a vengeance, only to blow out my knee! So frustrating when the mood is actually striking for once to exercise!
Love your week's worth of menu planning. I really need to start this for the summer. Otherwise I'm afraid we'll all be eating hamburgers and hotdogs on a nightly basis!
